Renovating kitchen – what “must haves” would you suggest?

The kitchen is on the small side. Would you go with more drawers than cupboards or vice versa? Do you have something unique for spice storage? What about plastic container storage? Would you go with built in oven/stove or just a regular stove? Anyone have an appliance garage (for coffee maker, toaster, etc) – if you do, do you love it or is it a waste of counter space? We’re thinking granite or corean (sp?) counter tops – I know they look beautiful but do they wear well if things are dropped on them etc… Any suggestions will be most welcomed!
What I’m looking for are things that others have in their kitchen that they would never want to be without or have found so useful they would make sure their next kitchen had it…that kind of thing.

I would go for an appliance garage and under counter lighting. If you can afford it, go for granite, but it is more upkeep than corian counter tops. Pick out a color cabinet because you love it, not because it is the trend.
